Chicken Divan

1 2.5 liter/quart casserole that is oven & microwave proof.

1 large, deboned chicken breast (or equivalent. Ifn ya like removing bones, go ahead n use whativver ya want) 3 carrots, sliced 1 bunch of broccoli, coarsely chopped 1 onion, sliced 1 cup mayonnaise ( not that yucky ``miracle whip'' stuff... real mayonnaise) 1 can cream of chicken soup 2 tsp -- 3 Tbsp. curry powder (experiment here... I'm up to 2.5 Tbsp.) 1-2 Tbsp. lemon juice (I use the concentrated ``ReaLemon'' stuff) 1/2 cup old, sharp cheddar cheese (not so old that it smells like sweatsocks!) grated

sjs's cooking method:

Grab a chicken breast out of the freezer & start de-frosting it in the microwave. (This'll take about 6 min on 30% & you should stop it at about 4 min to break it apart.) While that's running, get out your onion and carrots and peel & slice them.

Remove the chicken skin (if any) and pour off any fat. Put it back in the microwave on 100% with the carrots and onions. Cook till done (about 6 min). While it's cooking, get out the broccoli & chop it and, if you're faster than me, mix together the mayonnaise, soup, curry & lemon juice.

When your chicken is done, take it out of the casserole and put it on a plate. Chuck the onions onto your compost pile (they were just for flavouring). Put the broccoli into the dish (leave the carrots in) and cook till done (about 6 min depending on how big a bunch of broccoli you have). While it is cooking, set your oven to 350 F [175 C], chop up your chicken into bite-sized pieces and mix up the mayonnaise etc (if you haven't already) and grate the cheese.

When your broccoli is done, put the chicken on top of it, pour the mayonnaise etc. on top of that, sprinkle the cheese on top of that, put the cover back and put in the oven for 25 min.

Serve on rice (or bulgar or coucous or noodles - your favourite starch).

the original cooking method:

Start with unfrozen chicken. Boil it with the carrots & onions till done (I dunno how long this takes). Chop & steam your broccoli (about 10 min?). Throw out the water, carrots & onions that the chicken boiled in (or make soup?) and place in 2.5 quart casserole with broccoli and etc's like above.

Notes: This dish is for the hearty eater. It used to be our favourite, but my sweety's past 30 & can't eat heavy meals any more :( What I really like about this dish is that 25 min of oven cooking where I can relax & have a beer or talk to company rather than rushing about in the kitchen.
